Easy-Peasy Flourless PB Cookies


My Reese’s Pieces aren’t perfect. I guess I’ll have to eat all of them and start over.

This is not a new recipe. I make no claims for originality. At all. I just make these for gluten-free friends and they enjoy them (as do non-gluten-free individuals) They are a big crowd pleaser at Superbowl parties or any party….

Lady Sensory’s Not-So-Original but Much-Enjoyed Flourless PB Cookies:

2 cups natural peanut butter (you can use non-natural, but your arteries will thank me later if you use natural)

2 cups sugar

2 tsp vanilla extract

1/2 tsp salt

2 eggs

Reese’s Pieces (let’s say about 1 cup, or more if you are like me and snack while you bake)

Preheat oven to 350 degrees F. Put parchment on two cookie trays. In a bowl, combine 2 cups of PB with 2 cups of sugar until well mixed. Add 1/2 tsp salt &  2 tsp vanilla while mixing, then add eggs, one at a time, until well mixed. Roll teaspoons of dough into balls and smoosh with a fork. Put 3 Reese’s Pieces on each. Get OCD about it and do one of each color on each cookie. Don’t mess it up or you are going to have to start all over again like Black Swan until it’s “perfect.” Yes, that’s an OCD joke. Bake for 10-12 minutes (should be golden brown), allow to rest on the tray for a minute or so and then transfer to a rack or wax paper to completely cool. Continue to snack on Reese’s Pieces as you bake and marvel at E.T.’s marvelous taste in candy. When the cookies have cooled, in the words of my friend’s husband, “Take them to your face.”
